lady doctor vegan recipe #1

Lentil Soup

2 medium carrots, cut into 1/4-inch dice
2 celery ribs, cut into 1/4-inch dice
3 garlic cloves, chopped fine
1 medium onion, chopped fine
olive oil
1 pound lentilles
8 cups vegetable broth or water plus broth cubes.
1 can diced tomatoes
3-4 leaves of chard, chopped

In a 3- 6-quart pot, saute carrots, celery, garlic,
and onion in olive oil over moderate heat, stirring
frequently, until onion is softened, about 6 minutes.
Add lentils, tomatoes, broth, and salt and pepper to
taste (as well as any italian herbs) and simmer,
uncovered, stirring occasionally, 45 minutes, or until
vegetables are tender and soup is thickened. Add chard
and allow to cook 5-10 more minutes till chard is
tender.

oh, and sometimes, i add a splash of red wine or red
wine vinegar as well as chili seeds if i feel like spice.

fine. at least try the soup. it's good.
